Original recipe makes 4 Servings
2 cupsCooked ham; cubed
1/4 cupOnion; chopped fine
1/4 cupButter or margarine
1/4 cupFlour
2 1/2 cupsMilk
5 largePotatoes; thinly sliced
1 1/2 teaspoonsSalt
1/8 teaspoonPepper

Scalloped Potatoes and Ham Preparation

To make sauce, cook onion in butter or margarine till tender but not brown. Stir in flour, 1 1/2 teaspoons of salt, and 1/8 teaspoon pepper. Add milk. Cook and stir until thickened and bubbly. Cook and stir 1 to 2 minutes more.

In a 2 quart casserole place 1/2 of the cubed ham and half of the sliced potatoes. Cover with half the sauce. Repeat layers. Bake covered in 350 F oven for 45 minutes. Uncover and bake 30 minutes more or untill potatoes are done.

    Made this recipe tonight to use a leftover ham joint. After the 45 minute stage we added cheddar cheese onto the top layer. Lovely! And very filling! Definitely make this again!

    Excellent! I needed to add a little More flour because my first batch was a bit soupy, but it tasted delicious! I used a turkey ham, and with this recipe, I actually did not need any salt! I also added 2 cloves of minced garlic to the/milk/onion mixture. Yum!
