Very tasty and not very difficult. Use cooked, frozen tail on shrimp - large size. Sorry the measurements aren't exact - I'll try to keep track next time!

| 30 Shrimp; cooked |
| 10 smallPotatoes; cooked and cubed |
| 1/2 cupMushrooms; very thinly sliced |
| 1 tablespoonYellow hot pepper; finely sliced or chopped |
| 1/8 cupRed onion; very thinly sliced |
| 2 Capers |
| Mixed greens |
| -- DRESSING -- |
| Buttermilk |
| Mayonnaise |
| Fresh dill |
| Fresh chives |
| Fresh parsley |
| Horseradish |
Shrimp Potato Salad Preparation
Put shrimp and potatoes in a large bowl. Combine all dressing ingredients and pour over shrimp potato combination. Refrigerate for at least one hour. Reserve extra dressing to serve at the table.
Just before serving, add remaining salad ingredients except for greens. Add more dressing if necessary. Serve salad on a bed of mixed greens with extra dressing if desired.
