"An excellent recipe! I made several changes for mine; 1/2c Splenda instead of 1/4c, 1/2 tsp. cinnamon, and I omitted the apricots and chocolate. I changed the 1/2c water to 3/4c skim milk and added 2 scoops of protein powder to boost the protein. I also added 2 tbs's of an imitation honey to give them a hint of honey flavor. I will definitely make again! " - adrianf06

2 1/2 cupOats; raw, rolled or steel cut
1/4 cupSplenda No Calorie Sweetener
1 teaspoonCinnamon
1/4 teaspoonSalt
1/2 cupWhole-wheat flour
1/2 cupDried Apricots; chopped
1/4 cupPlain Almonds; chopped
1/4 cupOrganic Dark Chocolate; 80% cacao
1/2 cupNatural Peanut Butter; salt free
2 teaspoonVanilla
1/2 cupWater; room temperature
2 largeEgg whites

In a large bowl mix oats, Splenda, cinnamon, salt, whole-wheat flour, chopped apricots, almonds and dark chocolate. Beat egg whites, add to the mixture, then add vanilla and peanut butter, mix well. Add water and mix just untill moistened. Grease 9x13 inch baking dish with non-stick cooking spray, wet your hands and press mixture into the dish firmly. Bake at 350 degrees for 20 minutes. Let cool, then cut into 16 bars.

I loved this! Used cranberries, golden raisins, added peanuts too. I like the milk idea. Will probably use soy next time. I added honey on top about halfway through baking time, and it really gave it a great taste! Thabks for posting!

Didn't like it - far too bitter. We had it with custard and still had to add syrup to it to make it edible. :(
