| 4 cupsFresh watermelon; cubed, seeded |
| 3 mediumTomatoes; chopped |
| 1 smallCucumber; peeled and diced |
| 3 largeWhite & Green Scallions; chopped |
| 1 mediumSerrano chile; seeded, chopped |
| 1/2 cupYellow bell pepper; seeded & chopped |
| 1/4 cuplime juice; about 3 Mexican limes |
| 1/4 teaspoonSalt; to taste |
| 1/2 teaspoonBlack pepper; to taste |
| 1/4 cupCilantro; chopped |
Watermelon Gazpacho Preparation
In a blender, combineingredients. Adjust flavor with lime juice, salt & pepper. Chill for at least 4 hours. Serve app 3/4 cup portions as an appetizer. Garnish with basil, parsley, or cilantro as desired. Serve with Tapas style accompaniments i.e. crostini, grilled shrimp, or other small dishes.
