Chicken Marsala Preparation
Using a meat tenderizer, beat the chicken till it is inch thick.
Mix flour, salt, pepper and oregano - coat chicken. In a large skillet, melt butter in oil over medium heat. Brown chicken on both sides. Turn over chicken and add mushrooms, wine and sherry.
Cover and simmer 10 minutes. Turn the chicken and cover/simmer for 10 more minutes.
