This Chicken Bacon Alfredo recipe is very tasty! If you're watching weight, don't try this at home.

preheat oven to 375. Fry (or microwave) bacon until crispy, allow to cool. Heat olive oil on medium in 10" skillet. Rinse chicken breasts; coat generously with bread crumbs; fry in olive oil on medium/high heat until cooked through.
In small bowl, combine parsley, mayonnaise, 1/4 c. of the Colby/Jack cheese, and crumbled bacon. This should make a thick paste; if too thick add little more mayonnaise.
Transfer chicken to baking dish and coat with mixture from bowl. Sprinkle with parmesan cheese, drizzle Alfredo sauce over tops and add remaining shredded cheese.
Bake 30-35 minutes or until edges are golden brown. Salt and pepper to taste.

gauby 1 month agoI changed this up a bit but husband and I love this basic idea. I added broccoli, red pepper and sun dried tomatoes sautéing all with the chicken in a tablespoon of oil. Skipped the mayo too. Probably still heavy on fat, but delicious.

platinumdiva 7 months agoVery very good but you do not have to use a cup of Olive oil, a tablespoon per chicken breast worked fine for me. This was absolutely delicious though and many husband LOVED it.

mmr0124 10 months agoSo very delish it was so tasty and had so much flavor I took advise and just browned the chicken on the stove and let it finish cooking in the oven so juicy that way will make again

cari3brats 1 year agoThis was very good. Almost decadent. The only thing I did differently was to only brown the chicken breasts in the skillet and let them finish cooking in the oven. This keeps them from drying out.
ThePuck 1 year agoHoodie hooo a recipe for a simpleton like ME, not bad, not bad. I like! I don't think a microwave can get a bacon crispy without burning it though!
