4 eachskinless boneless chicken breasts
1 cupolive oil
1 cupProgresso Italian Bread Crumbs
3 tablespoonMayonnaise
1 cupColby or Jack Cheese; shredded
1 tablespoonParmesan
1 tablespoonFresh parsley; chopped
6 slicesBacon
1 cupAlfredo sauce
Salt and pepper; to taste

Chicken Bacon Alfredo Preparation

preheat oven to 375. Fry (or microwave) bacon until crispy, allow to cool. Heat olive oil on medium in 10" skillet. Rinse chicken breasts; coat generously with bread crumbs; fry in olive oil on medium/high heat until cooked through.

In small bowl, combine parsley, mayonnaise, 1/4 c. of the Colby/Jack cheese, and crumbled bacon. This should make a thick paste; if too thick add little more mayonnaise.

Transfer chicken to baking dish and coat with mixture from bowl. Sprinkle with parmesan cheese, drizzle Alfredo sauce over tops and add remaining shredded cheese.

Bake 30-35 minutes or until edges are golden brown. Salt and pepper to taste.

Family of 'do I really have to eat this?' ate it up. No leftovers. I even made a mistake by not reading carefully and combined the Alfredo with the mayo mixture and then placed on chicken. I'm guessing that it didn't matter since there were no left overs. Simply a Great recip

Very easy. Doubled recipe. Added more bacon since you can never have too much bacon and I didn't wany leftover bacon. Doubled alfredo sauce amount. Was very good. Family enjoyed it and have requested it again.

This is my absolute favorite recipe. We make it all the time now. The only thing I would change is dip chicken in buttermilk before frying because mine just would not stick the first time. Finally discovered that adding buttermilk made it work wonderfully. This recipe is amazing!!!!! Thanks so sharing it with us all.
