Very quick and satifying meal for cool weather. One of our family favorites. Re-heats well.
"The chili is lacking when compared to your taste buds preconception of chili (traditional red). If you take it as it is, what a delightful meal to prepare and enjoy. It could use slight modification; but for the novice cook, friends will applaud. Toppings when served are a must...sour cream, shredded cheese, tortillas, etc. They accent the dish very well.

Chop onion and garlic. Cut up chicken in to bite size pieces. Saute onions, garlic. cumin, oregano. anise seed and dried red pepper in olive oil for 5 mins. Push aside and add chicken and saute for another 5 minutes.
Add beans (with liquid), broth, chilies and cream, simmer until chicken is tender about 10 mins.
Top with cheese and cilantro.

admrink 1 month agoSo delicious. I didn't change anything but could have added more spice. Fresh green chili would have been delightful so will certainly make it next Hatch green chile season.
stevemur 1 month agoReally good. I agree with others that it's fairly mild. For some pop, add more cumin, salt and pepper, and diced jalapenos. Delicious, thanks for posting!
Aimeelady 2 months agoCould do with some more flavor its good and I like the anise, you dont get that taste very often in chili for sure. Only thing I was wondering about is when you said 4 large garlic did you mean the whole head or cloves. I did cloves so maybe that was why it seemed kinda bland. Agan not bad.

jaguglia 4 months agoMy new favorite. If I cook my beans myself I add extra fluid. Have also tried with tomatoes an frozen corn, good add ons!
anglsunawr 7 months agoI used canned chicken instead of the chicken breasts and included the broth in the cans as well. When adding the Cheddar Cheese I didn't feel it was too soupy at all. My whole family loved it and my husband rated it as one of his top favorite things I've made. It was delicious!

Autumnhatakeyama 12 months agoThis is the best base for an awesome soup! You can follow it to a T & be happy but you will easily find out u can customize it to your liking ex extra spice, choice of meat or no meat,veggies ext. we loved it !
cynag 1 year agoReally enjoyed this dish. We like spicy chili so I added jalapeños, and omitted the anise. Very nice dinner on a chilly evening
