Note: I didn't make these. Instead, my eight year old son did. The recipe was easy to follow. And the cookies came out so light! Amazing!
My only change in the future would be to double the spice amounts. I felt the flavour, for me, was just a tiny bit too subtle. But still amazing!
According to my husband, these were the "most perfect cookies" I've ever made! They were delicious. I added a little more pumpkin and user pumpkin pie spice & a dash of allspice instead of nutmeg. We will glaze as snowflakes tomorrow, but they are delicious without it!
I made these as written and added a quarter cup almond slices and a quarter cup of unsweetened shredded coconut. First batch was excellent! Second batch I read the reviews and added a quarter cup of pumpkin to the mix, even better texture and flavor!
