| 1 poundGround beef |
| 1 16-oz canKidney beans |
| 1 12-oz jarSalsa; to taste |
| 1 cupSweet corn |
| 1/4 cupNonfat Yogurt |
| 1/4 cupSour cream |
| 1 tablespoonChili powder |
| 1 cupCheddar cheese |
| 1/2 tablespoonCilantro |
| 4 Flour tortillas |
Beef Nacho Casserole (by Barbara Wright Stanco) Preparation
* Preheat oven to 350 degrees.
* In a skillet, brown chopped meat, drain fat and stir in beans, salsa, corn, sour cream, yogurt, chili powder and cilantro.
* Layer in a casserole dish as follows: Flour tortillas, meat mixture, cheese, flour tortillas, salsa and cheese.
* Microwave for 10 minutes at 80 percent poer, bake another 10 minutes at 350 degrees.
