* Heat oil in a 10 inch frying pan over medium heat, add the sliced potatoes and saute' until tender and golden brown, drain any excess oil.
* Add scambled eggs and edge pan with a spatula until the egg mixture is semi dry.
* Place a large plate over the frying pan and turn the mixture to cook on the opposite side.
* Cover and cook until done.
