Chili Beef and Corn Casserole
| 1 canLow Sodium Beef Broth |
| 1 can (6 oz)Tomato paste |
| 1 pkgTaco seasoning mix |
| 3/4 cupUncooked rice |
| 1 poundGround beef |
| 1 cupOnions; chopped |
| 1 17-oz canWhole kernel sweet corn; drained |
| Corn chips; optional |
| 1 Fresh tomato; diced |
Chili Beef and Corn Casserole Preparation
In small bowl, blend 1 cup beef broth, tomato paste, and taco seasoning; set aside. In saucepan, over high heat, combine remaining broth and enough water to equal 1 cup liquid; heat to a boil. Add rice and cook according to package directions.
In large skillet, over med-high heat, brown beef and cook onion until done; pour off fat. In 2 Qt casserole, layer 1/3 each of the rice, corn, meat mixture and reserved sauce; repeat layers twice, combining the last portion of meat and sauce for the top layer. Cover and bake at 375F for 40 to 45 min. or until hot. Garnish with corn chips and diced tomato
