12 eachRoma tomatoes
12 eachBasil leaves
12 cloveGarlic; peeled
Olive oil; to drizzle
Salt & pepper; to taste
Extra Virgin Olive Oil
Parmesan; to serve
Croutons; to serve

Warm Roasted Tomato Soup Preparation

Prep time: 10 minutes

Cook time: 30 minutes

Oven temp: 350F / 180C / Gas mark 4

1. Preheat oven.

2. Place tomatoes, basil and garlic on a baking tray. Drizzle with oil. Roast for 30 minutes or until soft.

3. Blitz until smooth. Season.

4. Serve drizzled with olive oil & scattered with parmesan and croutons.
