Ingredients

0.5 cup Heavy cream
1 8-oz package Gorgonzola Cheese;; crumbled
1 medium Shallot; diced finely
0.5 tablespoon Butter
4 cups Penne pasta
0.67 cup Walnuts; unsalted, coursely chopped
1 whole Chicken Breast
1/4 cup chicken broth
1 Optional Garnishes
1 tablespoon Vegetable oil
Chives
1 bunch Basil

Preparation

In a large pot of boiling water, boil the penne until al dente, about 8 minutes.

Meanwhile, get the chicken on the grill: Preheat grill or grill pan. Trim chicken breast of any fat (be sure to devein it!). Add salt and pepper to taste, and brush lightly with vegetable oil. Grill chicken breast after 3 minutes, turn and rotate 45 degrees, then flip. Sear for 3 minutes, rotate 45 degrees, and, after checking for doneness, remove.

While the chicken is grilling, make the gorgonzola sauce. In a small saucepan, heat butter over medium heat and add diced shallots until softened, about 1-2 minutes. Lower heat to low and add gorgonzola cheese, stirring as it melts. Add cream, chicken broth and walnuts. Keep heat on low, but gradually raise it to medium, stirring, taking care not to curdle or boil the sauce.

Drain the penne, add to serving bowl or dish.

This was a very nice recipe. Also good w/o the chix as a vegetarian meal. I omitted the chives because It didn't say when to add them.

Rich, bold and delicious. I used meat from a store bought rotissere chicken and half and half instead of cream. Served with mixed greens, vinegarette and fresh apples.

The recipe never said what to do with the walnuts. I just sprinkled them over the top. Turned out great.

Fair point sakh2 -- I completely forgot that I usually add some chicken broth to the gorgonzola cream sauce mixture, and that the walnuts are to go into the sauce with the gorgonzola. I've updated the recipe.

Not that good, way to much cheese and cream, also, the recipe doesnt tell you what to do with the wallnuts.
