Original recipe makes 4
3 lrgEggs
1 cupSugar
2/3 cupPumpkin puree
1 teaspoonLemon extract
3/4 cupFlour
1/2 teaspoonSalt
1 teaspoonGinger
2 teaspoonCinnamon
1/2 teaspoonNutmeg
1 teaspoonBaking soda
1 teaspoonVinalla
1 8 ozCream cheese; softened
4 tablespoonMargarine; softened
1 cupSugar, powdered

Pumpkin Roll, Judy's Preparation

beat eggs 5 minutes, slowly adding sugar, add pumpkin and lemon extract

combine dry ingredients and add to pumpkin mixture

pour into greaased and floured 15 x 10 inch jellyroll pan, Bake at 375 degrees for 15 minutes.

turnout on towel sprinkled with powdered sugar. Beginning at short end, roll up cake and towel together. Set aside to cool

Beat cream cheese and margarine together until smooth. add sugar and mix well. add vanilla and beat until smooth

Unroll cake, remove towel spread filling on cake. Roll up again, slice to serve.
