Double Cheese Mashed Potatoes Preparation
In large saucepan of boiling, salted water, cook potatoes until tender but not mushy, about 15 minutes. Drain and shake over low heat to dry off. Mash potatoes with a masher or put through a food mill.
In separate bowl, beat together cottage cheese and eggs. Beat into potatoes. Beat in butter and green onions. Season well with salt and pepper. Pile into buttered gratin dish; sprinkle with cheese. Bake at 375F for 30 minutes or until center is soft. Serves 8.
