Chicken Tacos with Lime-Cilantro Crema

This is a recipe I adapted from a fish taco recipe. I make it with leftover chicken but you can season raw chicked and cook it in a skillet in minutes. You can use fat free mayo and fat free sour cream to decrease fat & calories. I serve it with Pinto Salad.

Chicken Tacos with Lime-Cilantro Crema Preparation

To prepare crema, combine the first 8 ingredients in a small bowl, set aside.

Season cooked chicken with cumin, Paprika, cayenne, salt and garlic powder. Heat in skillet. Heat tortillas according to package directions. Divide chicken between tortillas, top with cabbage and crema.

I haven't made the crema, but the taco seasonings are in a wonderful proportion. I use one large chicken breast since it's just me & my husband and boil it to get it tender. Once that's cool enough, I just shred it by hand, add the seasonings, add a few teaspoons of diced jalapeƱos and their juice, a bag if 10 minute instant rice and enough chicken stock to soak into the rice. It's WONDERFUL hot and cold as leftovers! :)

I made this recipe this weekend for a dinner party at my house, I did substitute the corn tortillas for fresh flour tortillas. I also had a vegetarian family in attendance and made some with tofu! it was amazing. I would definitely make this again.

Wonderful combination of flavors with the Lime-Cilantra Crema. I added a small amount of anaheim pepper (will try something hotter next time like a very small amount of habanero) and mushrooms to the chicken mixture.

Very Good.. Whole family loved it.
I did make a few changes.

1) I just used McCormics Taco seasoning on the chicken about 3 Tbs.
2) I also soaked and cooked the chick in 1/2 of a lime juiced, 1/2 of a lemon juiced, and 1/2 of an orange juiced.
3) I cubed the chicken also.

Was very good and the Crema add a nice flavor to it.
