Chicken Tacos with Lime-Cilantro Crema

Ready in 30 minutes

This is a recipe I adapted from a fish taco recipe. I make it with leftover chicken but you can season raw chicked and cook it in a skillet in minutes. You can use fat free mayo and fat free sour cream to decrease fat & calories. I serve it with Pinto Salad.

"I haven't made the crema, but the taco seasonings are in a wonderful proportion. I use one large chicken breast since it's just me & my husband and boil it to get it tender. Once that's cool enough, I just shred it by hand, add the seasonings, add a few teaspoons of diced jalapeƱos and their juice, a bag if 10 minute instant rice and enough chicken stock to soak into the rice. It's WONDERFUL hot and cold as leftovers! :)"

Ingredients

1/4 cup Green onion; sliced
1/4 cup Cilantro; chopped
3 tblspoons Mayonnaise
3 tblspoons Sour cream
1 teaspoon Lime rind; grated
1 1/2 teaspoons Lime juice
1/4 teaspoon Salt
1 cloves Garlic; minced
-- Tacos --
1 teaspoon Cumin; ground
1/2 teaspoon Paprika
1/4 teaspoon Cayenne
1/8 teaspoon Salt
1/8 teaspoon Garlic powder
1 1/2 pound Chicken; cooked, shredded
8 ea Corn tortillas
2 cups cabbage; shredded

Preparation

To prepare crema, combine the first 8 ingredients in a small bowl, set aside.

Season cooked chicken with cumin, Paprika, cayenne, salt and garlic powder. Heat in skillet. Heat tortillas according to package directions. Divide chicken between tortillas, top with cabbage and crema.

I loved the cream and the chicken spices! After rolling the tortillas I gave them a quick pass in hot oil in a pan. Not deep fried, just enough oil make them golden. Thanks for posting!

An amazing dish thats a favorite in my house! I top it with Rotel Mexican diced tomatoes with lime and crumbled cotija cheese. This one is a keeper!

Excellent! I made this using tilapia unread of chicken. I also sautéed some onion, poblano pepper, and mushrooms using the same seasonings. It was great!
