Crunch mixture: Combine first 5 ingrediends (flour, oatmeal, brown sugar, melted butter). Press one half of mixture into a greased 9x13 inch baking dish. Cover with rhubarb.
Combine remaining ingrediends ( suguar, cornstarch, water and vanilla). Cook until thick & clear. Pour over rhubarb in baking dish. Top with remaining crumbs.
Bake in moderate oven 350 degrees
I love the crunchiness of the crust & toppings of this crunch!

michellebolhuis 6 months agoJust used Splenda for baking instead of sugar in the rhubarb. I cooked the rhubarb with the sauce and made a 1 1/2 batch of the crunch. Very good! Will definitely be making again since my son loves rhubarb.
MayB1 6 months agoWe loved this recipe!!! Reduced the brown sugar by not packing it. Also used pears in place of rhubarb, turned out really well!! I baked it for an hour.

Carolynanne 1 year agoYummy. Reduced sugar with rhubarb to 1/2 cup as didn't have enough rhubarb and added ripe peaches. Really good
Gaia1 1 year agoI increased rhubarb to 6-8 cups. I have a huge plant. Took it to a party. it was loved by all.
ibbclay 1 year agoMade this today. Added about 2 cups sliced strawberries to the rhubarb. Baked for 40 minutes to get it brown on top. It was very good and I would definitely make again.

TheAudiophilesWife 1 year agoI'm not a huge fan of rhubarb, but this was delicious. (I down-sized the recipe for 9 servings so it would fit in a 9x9 pan. Since the pan was glass, I dropped the temp to 330 and baked it for 50 minutes.)
