Ingredients

1 cup Flour; sifted
3/4 cup oatmeal; uncooked
1 cup Brown sugar; firmly packed
1/2 cup Butter; melted
1 teaspoon Cinnamon
1 cup Sugar
2 tablespoon Cornstarch
1 cup Water
1 teaspoon Vanilla
4 cups Rhubarb; fineley diced

Original recipe makes 12

Servings  

Preparation

Crunch mixture: Combine first 5 ingrediends (flour, oatmeal, brown sugar, melted butter). Press one half of mixture into a greased 9x13 inch baking dish. Cover with rhubarb.

Combine remaining ingrediends ( suguar, cornstarch, water and vanilla). Cook until thick & clear. Pour over rhubarb in baking dish. Top with remaining crumbs.

Bake in moderate oven 350 degrees

I love the crunchiness of the crust & toppings of this crunch!

This was great and so easy! I was short on rhubarb, so I added one small diced apple. Delicious!

Just used Splenda for baking instead of sugar in the rhubarb. I cooked the rhubarb with the sauce and made a 1 1/2 batch of the crunch. Very good! Will definitely be making again since my son loves rhubarb.

We loved this recipe!!! Reduced the brown sugar by not packing it. Also used pears in place of rhubarb, turned out really well!! I baked it for an hour.

Yummy. Reduced sugar with rhubarb to 1/2 cup as didn't have enough rhubarb and added ripe peaches. Really good

I increased rhubarb to 6-8 cups. I have a huge plant. Took it to a party. it was loved by all.

Made this today. Added about 2 cups sliced strawberries to the rhubarb. Baked for 40 minutes to get it brown on top. It was very good and I would definitely make again.
