"Excellent recipe! I would clarify that the mashed strawberries should be 2 cups before mashing, not after (otherwise, 3 tablespoons of cornstarch isn't enough to thicken it). I use a blender for the mashing and I put the whole strawberries pointy side up on the crust, then pour the mashed filling on top. It looks just like a magazine. Finally, if strawberries are in season, I only use 1/4-1/2 cup sugar; the strawberries are plenty sweet on their own!" - tinabeth

15 ounceRefrigerated sugar cookie dough
2 cupStrawberries; mashed
2 cupStrawberries; whole
3 tablespoonCornstarch
1 cupSugar
1 tubCool Whip

Fresh Strawberry Pie Preparation

Preheat oven to 350 degrees. Freeze cookie dough until very firm. Slice thinly and spread in a pie pan. Bake 12-15 minutes until brown; cool.

In a saucepan, mix sugar and corn starch. Add mashed strawberries and cook slowly for 10 minutes or until it thickens. Cool slightly. Add whole strawberries and pour into crust. Chill. Top with Cool Whip.

YUM! Yum. Yum. Yum. YUM! Made this today with the strawberries we picked today and it was divine. I did use a refrigerated pie crust and it was still great. Now, I'm wondering if I can make more and freeze it....
