1/2 cupBrown sugar
1/4 cupMargarine; melted
6 eachPineapple; sliced
6 eachMaraschino cherries
2 eachEgg; separated
1/2 cupSugar
3/4 cupFlour
1/2 teaspoonBaking Powder
1/4 teaspoonSalt
1/4 cupPineapple juice

Pineapple Upside-Down Cake Preparation

In a small bowl, combine brown sugar and margarine; blend well. Spread into ungreased 9" cake pan. Arrange pineapple slices and cherries on top; set aside.

In a small bowl, beat egg yolks until thick and light yellow in color. Gradually add sugar and beat well. Add flour, baking powder, salt and juice; mix well.

In another small bowl, beat egg whites until stiff peaks form; fold into batter. Pour batter evenly into baking pan.

Bake at 350 degrees for 30-35 minutes or until done. Cool in pan for 2 minutes. Invert onto serving plate.

    Ok, I made this the other day as a little something to take to work (yay night shift, lol)... I tweaked it up just a bit by adding some toasted coconut to the pineapple layer and instead of using pineapple juice (because I only had fresh pineapple and no juice) I used mango smoothie juice that I had in the fridge... I made it into large cupcakes instead of a regular cake for individual servings... I made 12 but surprisingly only 10 made the journey to work with me, lol!! Hubby discovered them;) Well, they got rave reviews from my coworkers!! I topped it off with ice cream but it would've been great with whip cream too... This recipe will remain in my favorites!! Super tasty and moist
