Recipes »  Soups, Stews and Chili  »  Cheese Soups

Made with home made beef broth this makes an awesome French Onion soup.

"While there is no sugar added using a homemade beef broth you would swear there was. The homemade broth gives the soup a slightly sweet taste you just don't get with canned or powdered boulion. While the recipe suggests 2 servings there really 3. My wife and I both went back for seconds. " - cookingRN

Servings
Original recipe makes 3
1/8 cupButter
3 mediumOnions
3 cupsBeef broth
1/2 cupWhite wine or dry sherry
1 tablespoonWorcestershire Sauce
1/4 teaspoonGarlic powder
1 cupSwiss Cheese; shredded
2 slicesFrench bread; 3/4 in. thick
1/6 cupParmesan cheese; grated
1/8 teaspoonSalt

Baked Onion Soup Preparation

Saute onions in butter with garlic powder and salt until soft.

Mix in beef broth, worcestershire sauce and wine, if desired, Heat through.

Ladle into 2 or 3 oven proof bowls, distributing onions as evenly as possible.

Top each serving with l slice French bread. Sprinkle with cheese. Bake in preheated 425 degree oven l0 minutes or until hot and bubbly.

Heat under preheated broiler until cheese is light brown. Makes 3 servings.

Mozzeralla cheese also works great if you don't have the Swiss and Parmesan

I prefer homemade beef broth made by boiling a few soup bones with some sliced carrots, onions and a few garlic cloves for a couple days.

This recipe doesn't say how many onions, I guessed, based on another recipe, don't know what the 'salsa, salsa' at the bottom means, doesn't say if both cheeses go on the top, only mentions parmesan on top Swiss????
