Fruity Asian Coleslaw
| 4 cupscabbage; shredded |
| 2 eachapples; coarsely chopped |
| 1 canpineapple chunks; drained |
| 1/3 cupRaisins |
| -- Dressing -- |
| 1 1/2 cupsMayonnaise |
| 3 tablespoonskey lime juice |
| 1/4 cupSplenda; to taste |
| 1 teaspooncardamom |
| 1/4 teaspoonCinnamon |
| 1 teaspoonginger root powder |
| 1/8 teaspoonfive-spice powder |
| 1 teaspoonpoppy seeds |
Fruity Asian Coleslaw Preparation
Blend together the mayonnaise, Splenda, key lime juice, cardamom, cinnamon, ginger root, five-spice powder and poppy seeds, and set aside.
Drain pineapple very well, wash and peel apples then cut into medium chunks . Mix apples, raisins and pineapple into shredded cabbage. Add dressing and toss to coat. Don't add dressing all at once in case you don't need it all.
This is a little different than the usual coleslaw, but very good and easy to prepare. Prepare dressing ahead of time, then put salad together whenever you wish. All of the spices should be added carefully, to-taste, as the best flavor is arrived at with just the right amounts of each.
