Ingredients

2 tablespoon Unsalted butter; melted
1 cup Flour
3/4 cup Yellow corn meal
3 teaspoon Baking Powder
1/2 teaspoon Course Salt
1/2 cup milk
1/2 cup Sour cream
1 large Egg
1/3 cup Sugar
14 3/4 ounce Creamed corn

Preparation

Preheat oven to 425 degrees. Butter an 8" square pan and set aside.

Combine flour, corn meal, baking powder, and salt in a medium mixing bowl. Whisk together milk, sour cream, egg, sugar and butter in a small bowl. Stir in creamed corn. Fold wet ingredients into dry ingredients until well combined.

Pour batter into prepared pan and bake for 30 minutes or until set and golden brown on top. Cool slightly before cutting in to squares.

excellent and moist! My son who does not like corn bread loves this! I make it as muffins. If you double the recipe it makes 3 dozen muffins! Perfect for my family gatherings!
