Combine first 6 ingredients in a large pot. Bring to a boil. Cover and simmer 10 minutes or till vegetables are tender.
Add parsley and simmer 10 minutes longer.
Add cooked fusilli or your favorite pasta.and serve.

gkoliver 1 year agoThis was a great recipe! I left out the mushrooms since my kids don't like them, used rotini mushrooms, and served with homemade wheat bread... both of my picky eater kids LOVED it! Thank you!
shanewing 2 years agoThis was pretty good. I added a tbs of coconut curry sauce just because I had it and it seemed like a good idea at the time. delish! I used leftover chicken pastry for my chicken and 'noodles.' great way to disguise leftovers.

Aggierose 2 years agoVery tasty! I did not use the mushrooms or parsley because I didn't have them on hand. Instead I added salt, pepper, and a bay leaf (as suggested earlier). I also used egg noodles as my pasta choice. Will definitely become a staple in the cold Chicago winter!!!
ryanmbruce 4 years agoWe made it with rotini instead. Ours came out a little bland. We added pepper and some Italian seasoning. We'll probably try this again with some more spices or something to kick it up a notch.
