4 Spicy cooked mackeral fillets
Mix together two of the mackeral, the cooked mashed potato; the whisked eggs and an onion and a chopped tomato -
add salt and pepper to taste
Place in oven proof dish and level off.
Grate the cheese and spread evenly on top
decorate with slices of tomato, and onion
Place in hot oven, Gas Mark 6 for 20 minutes
Take out and place dish under hot grill for five minutes or until cheese is lightly toasted on top
Serve with the remaining two mackeral heated in the microwave for 1 1/2 minutes.
