Spicy Chicken Tortilla Soup

We prefer to fry our corn tortillas in butter as opposed to the tortilla strips mentioned in this recipe. In my opinion, nothing brings out the flavor of tortillas more than warming them in a skillet in some butter.

1 mediumOnion; chopped
3 clovesGarlic; minced
2 tablespoonVegetable oil
1 4-ozChopped green chilis
1 15-oz canMexican style stewed tomatoes
4 cupsChicken broth
1 teaspoonLemon pepper
2 teaspoonWorcestershire Sauce
1 teaspoonChili powder
1 teaspoonGround cumin
1/2 teaspoonHot pepper sauce
4 tablespoonFlour
1/2 cupWater
1 poundBoneless skinless chicken breast; cut into small cubes
1/3 cupLow fat sour cream
salt and pepper; to taste
4 Corn tortillas
1/4 cupFresh cilantro

Spicy Chicken Tortilla Soup Preparation

In a large saucepan, cook the onion and the garlic in the oil until the onion is softened. Add the chilies, tomatoes with their juice, broth, lemon pepper, Worcestershire, chili powder, cumin, pepper sauce, chicken, and cilantro. Bring to a boil, reduce heat and simmer for 20 minutes. In a small bowl, combine the flour with the water and whisk it to mix well. Stir the flour mixture into the soup and bring it back to a boil and simmer for 5 minutes. Stir in the sour cream, salt, and pepper and garnish each portion with the tortilla strips.

Tortilla strips:

Cut the tortillas into 1/4 inch strips and arrange them in one layer on a baking sheet sprayed with non-stick spray. Bake them at 400 for 10 minutes or until they are lightly toasted and crispy. Sprinkle lightly with salt, if desired.

Great version of an old favorite. I used one fresh Anaheim chili and one jalapeño chili diced and sautéed with the onion and garlic in place of the 4 ounce can of chilies, and the flavor was wonderful.

Absolutely delicious! Hubby loves it too! Buttered both sides of a flour tortilla and pan fried them crispy then dipped them in the soup. Turned out amazing!

REALLY GOOD!!!! I loved this soup. It was fresh, yet hearty and satisfying . My husband and three kids just gobbled it up too. I added a can of black beans, a can of hominy, and a can of corn to it. I also served it with lime wedges. I WILL be making this again.

Great recipe! Followed others and added sweet corn, black beans,lime juice, and then just a Tbsp of brown sugar to add some sweet to the spice. My wife LOVES this soup!
