This is easy and makes a good, home cooked meal. Just put some potatoes in the oven to bake with the meatloaf and add a salad and dinner is served!

"I didn't have parsley to add, at the time. Celery salt, not. But a tablespoon of minced celery. Added a tbsp. of Cuddin Eddies Fais Do Do seasoning. Next time, I will sauté bell pepper to make them softer. And I added I added a tbsb of Cuddin Eddies Pepper Relish. Bangin recipie.

1 lb.Lean ground meat
1 largeegg
9 eaSaltine crackers
1 10-oz canRotel tomatoes
2 tablespoonsLipton Onion Soup Mix
1/4 teaspoonCelery salt
1/4 teaspoonGarlic powder; or minced garlic
1 tablespoonDried parsley
1/4 smallBell pepper; chopped - optional
1/3 cupKetchup

Mom's Meatloaf Preparation

Preheat oven to 350 and spray a loaf pan with non-stick cooking spray. Put the crackers in a sandwich bag and crush them. Put meat, egg, cracker crumbs, Rotel tomatoes, onion soup mix, celery salt, garlic, parsley, and bell pepper in a medium mixing bowl and mix all ingredients well with clean hands. Turn the meat mixture into the loaf pan and pat down gently to form a loaf. Pour the ketchup on top and spread it evenly over the meat with a spoon. Bake at 350 for at least an hour. We like ours slightly brown on top and that usually takes about 1 hour and 20 minutes.

I put the whole envelope of Lipton Soup mix (I didn't read the recipe correctly) and 1.5 lb ground bison. It was delicious and a big hit! Rotel adds the perfect flavor.
