One of my husband's favorites.

"Great soup. This has become a go to recipe. I increase the thyme and added more spices (sage, rosemary, or basil). I drain the ground beef, and I cook the noodles right in the simmering soup - A one pot meal!"

Original recipe makes 8
1 poundGround beef
1 Onion; diced
2 PodsGarlic; minced
2 eaCarrots; diced
2 eachCelery; diced
1 32 ounceChicken broth
1 14-oz canDiced tomatoes
1/2 teaspoonSalt
1/2 teaspoonPepper
1/2 teaspoonThyme
3 cupsWide eggs noodles; cooked (al dente) and drained
2 tablespoonParsley

Hamburger Soup Preparation

Brown the meat and onion and don't drain the drippings. Add the garlic, carrots, and celery and cook, stirring occasionally until the vegetables begin to soften. Add the broth, tomatoes, and seasonings and bring the soup to a boil. Turn down the heat and simmer for 30 minutes. Just before serving, stir in the noodles and parsley and simmer for about 3 minutes longer. Garnish with sour cream, if desired.

  • This is how good the recipe is. I used a mild sausage and added too many noodles, guess I should have measured the noodles. Added a can of chicken broth because of the mistake. I served it (to myself) with some garlic cheese bread and dunk the hell out of it in the broth. photo by Tipper26 Tipper26
