Prepare this delicious dish the night before your brunch. Allow it to sit overnight, and pop it into the oven 45 minutes before your guests are set to arrive.

Original recipe makes 12 Servings
12 ouncesItalian turkey sausage; or Pork Sausage, to taste
1 loafWheat bread; tear into bite-size pieces
1 cupMonterey jack cheese; shredded
11 servingsfat free Egg product
1 3/4 cupMilk; low-fat
1/2 cupFat free half and half
1/4 teaspoonSalt
1/8 teaspoonBlack pepper
1/2 cupCheddar cheese; shredded

Make Ahead Baked Eggs and Sausage (ideal For Brunch) Preparation

Brown the sausage in a skillet over medium heat, stirring to crumble. Remove from heat, drain fat and set aside to cool.

Lightly spray a large baking dish with cooking spray. Place bread pieces in the bottom of the dish. Layer the sausage over the bread and top with Monterrey Jack cheese. In a medium bowl, whisk eggs, milk, salt and pepper and pour into baking dish over the sausage and bread.

Top with cheddar cheese, cover dish with plastic wrap and refrigerate overnight.

The next morning, heat oven to 325 degrees. Remove plastic wrap from dish and bake casserole 40-45 minutes or until cooked through.

great but I made changes. I added crimini mushrooms and dived onions to the mix. cooking time was way off. I cooked it for an hour but it was still raw. Because I had company waiting to eat I microwaved it for 5 min and that made it perfect.

We do this about once a month, decadent Sunday brunch, we use real eggs, real half and half and serve with sourdough toast with real butter.
