A new twist to the classic favorite, this easy meatloaf is tasty and fun!

Notes Taco Meatloaf Preparation
Combine hamburger, egg, cracker crumbs, and taco seasoning and mix well. Place half of the meat mixture into loaf pan. Spread with thin layer of salsa and place remaining half of meat mixture on top of that. Place three slices of cheese then top off with generous amount salsa and bake in 375 oven for about 35 min. Remove from oven and top with with cheese. If desired then return for appox. 10 more min. or until it's done.

this was amazing i used ritz garlic and herb crackers instead and i added more cheese! cheesier the better!!!

This was moist AND delicious! Something different from plain old meat loaf. I added more cheese & salsa, my husband loved it! I'm gonna add this to my cooking rotation.

My family loved this! I did replace the American cheese with shredded cheddar though.

I cooked it just a tad too long. It was a little drier than how I like meatloaf, but it was good! Used crushed tostitos instead of crackers and had Spanish rice as the side dish.

This was pretty good, a different twist on boring meatloaf. I used shredded fiesta cheese blend and served this with spanish rice.

Very simple and quick to make. The entire family loved it. I made mini loafs and added Mexican cheese as well as some chili mix. The only thing I don't care for was how the loaf separated at the first layer of salsa...it made it a little difficult to serve onto plates.
I will make this again and again.
