Garam is the Indian word for "warm" or "hot." It is an aromatic spice blend of different dry-roasted, ground spices from the colder climes of northern India. It is intended to add a sense of "warmth" to both palate and spirit.
Many Indian recpies call for this spice which is simple to make but not always easy to find.
Mix all ingredients and lightly roast on a tawa or any heavy skillet. Grind in a food processor and sieve to get a fine powder.
Note: A tava, also known as tawah, is a large, flat or slightly concave disc-shaped griddle made from cast iron, steel or aluminium.
