Garam Masala

Garam is the Indian word for "warm" or "hot." It is an aromatic spice blend of different dry-roasted, ground spices from the colder climes of northern India. It is intended to add a sense of "warmth" to both palate and spirit.

Many Indian recpies call for this spice which is simple to make but not always easy to find.

3 tablespoonBlack pepper
3 tablespoonCinnamon
1 1/2 tablespoonCardamom; - brown
1 tablespoonCloves
1 tablespoonCumin; seeds
1 tablespoonBay leaves; - crushed
1/2 tablespoonCoriander; seeds

Garam Masala Preparation

Mix all ingredients and lightly roast on a tawa or any heavy skillet. Grind in a food processor and sieve to get a fine powder.

Note: A tava, also known as tawah, is a large, flat or slightly concave disc-shaped griddle made from cast iron, steel or aluminium.
