Mix garlic,salt and pepper,and a few drops of oil to make a paste. Add oil,chopped tomatoes,and basil.
Brush sliceed bread with oil and place under broiler till a golden colour. Put brochetta and cheese on top. Broil until cheese is melted.

Cookingupcats 3 years agoworked excellently however I did not use the recommended half a cup of olive oil. Just a few drops for the paste and to brown the bread. Worked great.
