Original recipe makes 4
4 cupsCoffee; (your favorite brew)
1 cupWhipping cream
8 tablespoonsIrish whiskey
8 teaspoonsSugar; (or to taste)

Irish Coffee Preparation

While the coffee is brewing, whisk the cream in a large bowl until it has just started to thicken into a soft, velvety mass. Like ice cream that has just started to melt (no peaks, not even soft ones). Pour into a creamer for easy serving. Set aside (not in the refrigerator).

Pour 2 tabelspoons of whiskey into each mug or glass, then spoon 2 teaspoons of sugar (or to taste) into each one. Fill each mug 2/3 full with coffee. Stir to dissolve.

Turn the spoon bowl-side down and position it in the middle of the mug with the tip just touching the surface of the coffee. Very gently pour the cream over the back of the spoon and miraculously you will see it slip off and float on top of the coffee. Continue pouring until the layer is as thick as your thumb.
