Owen's Breakfast Casserole
Based on the recipe from www.OwensInc.com."I was hungry for breakfast sausage and Jiffy cornbread and fortunately found this recipe. I didn't have any jalapeno peppers but instead used some Hatch green chili peppers and it was delicious. I think next time I'm going to put about 1/3 of the cornbread batter on the bottom so the meat (hopefully) will be in the middle. If you've got a family of 3 or more and you're having it as a main course, go ahead and double the recipe. Really good & easy recipe. I may try it with a 1/2 a can of drained Rotel tomatoes next time, too, just to experiment." - panovark

Owen's Breakfast Casserole Preparation
Brown the sausage and onion and drain the fat. Place the meat mixture in a square baking dish, sprinkle with chopped jalapeno and top with cheese. Mix the cornbread mix according to package directions, using 2/3 cup of milk instead of the 1/3 called for on the package, and spread over the cheese. Bake in the oven according to the cornbread package directions until the cornbread is golden brown on top.
Good with Makeover Leftover Baked Potato.
