Owen's Breakfast Casserole

"I was hungry for breakfast sausage and Jiffy cornbread and fortunately found this recipe. I didn't have any jalapeno peppers but instead used some Hatch green chili peppers and it was delicious. I think next time I'm going to put about 1/3 of the cornbread batter on the bottom so the meat (hopefully) will be in the middle. If you've got a family of 3 or more and you're having it as a main course, go ahead and double the recipe. Really good & easy recipe. I may try it with a 1/2 a can of drained Rotel tomatoes next time, too, just to experiment."

Ingredients

1 pound Owens Hot Sausage
1/2 Onion; chopped
8 Jalapeno pepper slices; chopped-the pickled jalapenos (optional)
1 8-oz package Sharp Chedder cheese
1 package Jiffy Cornbread Mix
1 Egg
2/3 cup milk

Original recipe makes 6

Servings  

Preparation

Brown the sausage and onion and drain the fat. Place the meat mixture in a square baking dish, sprinkle with chopped jalapeno and top with cheese. Mix the cornbread mix according to package directions, using 2/3 cup of milk instead of the 1/3 called for on the package, and spread over the cheese. Bake in the oven according to the cornbread package directions until the cornbread is golden brown on top.

Notes
