Can be assembled ahead of time, then baked. Bring to room temperature before baking.
Cook bacon in large skillet until crisp; remove bacon and drain on paper towels. Crumble bacon.
Measure 2 T drippings into large micro safe bowl and stir next seven ingredients into drippings. Blend well. Stir in 2 cups of the cheddar cheese. Microwave for 4 minutes. Stir in sour cream and chilis until well blended.
Spoon mixture into lightly greased 13 x 9 inch dish. Sprinkle evenly with bacon and remaining cheddar cheese. Arrange BBQ beef over cheese. Drizzle BBQ sauce over pork.
Bake at 350 for 45 minutes. Let stnd 10 minutes before serving.
