These super yummy, crunchy cookies are actually good for you!
In large bowl, sift together first 4 ingredients. In large mixer bowl beat shortening for 1 minute. Add Splenda blend and beat until fluffy. Add eggs and vanilla and beat well. Add prune filling, beating until well combined. Gradually add flour mixture.
Stir in oats and rice krispies.
Drop by rounded teaspoons 1" apart on lightly greased cookie sheet. Bake in a 350 oven (325 if convection) for 12 minutes (about 10 if convection), until light brown. Cool on cookie sheet for 2 minutes, then remove to wire rack.
Yields about 7 dozen.
