This was absolutely delicious! Another recipe that is versatile! Add fruits you love and leave out the ones you don't. My husband is a picky fruit eater and he loved this. This will be a dish I will serve often.
I made this with mangos, strawberries, blueberries and a banana. The flavors blended well. The dressing was better than I thought it would be (I added lime juice, too). All in all, this was a delicious fruit salad!
I heated the dresssing for one minute in the microwave before whisking with a wire whisk. Then I chopped about 2 tsp of fresh mint into the dressing to sit while I prepared the rest of the salad. It was a hit!
Absolutely delicious! I love the dressing: I used huckleberry honey from a local apiary, which is dark and flavorful.
I think the best thing about it is that you can use any fruit you want. I used apple, pear, and red grapes; I would have used pineapple, but my husband forgot to pick it up on his way home.
Oh well. That just means we'll have to make it again!
I cannot wait to make this recipe! My husband is in the army and he's really finicky about how he eats. He's coming home for his 2 weeks vacation from deployment soon and we're heading to the beach...this sounds like a great light and healthy way to start a day at the beach! Thanks for posting!
