It's almost Easter and the chickens are laying a lot of eggs. A great way to use some of those Easter eggs the kids found.

7 largeEggs; hard boiled (10 minutes), peeled, and cooled
3 tablespoonMayonnaise
1 tablespoonMustard
Salt; to taste
Pepper; to taste
1/8 teaspoonCelery salt
1/4 Onion; finely chopped
1/8 teaspoonGarlic powder
1 mediumTomato; sliced, remove seeds and pulp, then chop
1/2 cupBread and butter pickles; chopped
Paprika; sprinkled on top - optional

Egg Salad Preparation

Roughly chop the eggs in a mixing bowl. Add the other ingredients down to the paprika. Mix gently until it's all well blended. Add paprika, if desired, cover and refrigerate for one hour. Serve on your favorite bread to make a sandwich or as a side dish as desired.
