Heirloom Tomato Salad

Heirloom tomatoes have a wonderfull, full flavor not matched by common red varieties. If you have home-grown red tomatoes, you could substitute those for the roma tomatoes. You could also use all heirloom tomatoes - use as many different colors as you can get for the best effect.

"An absolutely delicious and elegant salad. We love the variety of colors and flavors of heirloom tomatoes and this is a perfect recipe to use them in. I did make a few modifications to the original recipe to suit our tastes...omitted the Roma tomatoes using all heirlooms, added a medium, thinly sliced red onion along with some crumbled Gorgonzola and homemade garlic croutons (added croutons just before serving). This simple tomato salad makes a great summer side dish that can be served at room temperature. We'll definitely be using this excellent recipe again."

3 tablespoonsExtra Virgin Olive Oil
1 1/2 tablespoonsBalsamic vinegar
1/2 teaspoonDried tarragon; (or 2 teaspoons fresh, chopped)
1/2 teaspoonDried basil; (or 2 teaspoons fresh, chopped)
salt and pepper; to taste
1 teaspoonGarlic; minced or pressed
1 poundHeirloom tomatos
1/4 poundRoma tomatoes

Heirloom Tomato Salad Preparation

In a small mixing bowl, whisk the olive oil, vinegar, garlic, and herbs until incorporated. Season the vinaigrette with salt and pepper. With a serrated knife, cut the tomatoes into small to medium wedges. Add the tomatoes to the dressing and toss gently. Let sit for an hour or so to let the flavors blend.

Notes

I used two kinds of heirloom tomatoes and a couple of small Roma tomatoes, and the salad was beautiful.

Wonderful flavors, and I was just using Romas, in February! I can't wait 'til tomato season and I'll definitely try it again.
