Cheesy Tortellini and Chicken

An easy chicken and pasta dish.

"I didn't cook the chicken breast quite all the way before dicing it - that way, when I added it to the pan with the edamame and tortellini, i was able to saute them all together for a couple minutes to "marry the flavors" better and the chicken didn't end up overcooked.

Also, instead of dressing, I added to the pan right at the end a 1/2 cup of grated parmesan cheese, a few tablespoons of cream, and a few tablespoons of chicken broth. Tossed everything together over medium heat till the cheese melted and everything got a good coating - sort of a quickie alfredo sauce." - jeff-prime

10 ounceEdamame
19 ounceCheese Tortellini
13 ounceCooked Chicken Breast; (3 cups chopped)
1 mediumOnion; sliced
2 tablespoonolive oil
1/4 cupItalian dressing

Cheesy Tortellini and Chicken Preparation

Sprinkle chicken breast with onion salt and paprika. Grill until juices run clear. Dice cooked chicken. Cook tortellini according to package directions. Cook edamame according to package directions and shell. Cook onion in olive oil until softened and slightly browned. Stir in shelled edamame, cooked chicken, and tortellini. Stir to combine. Pour dressing over top and stir. Serve with parmesean cheese if desired.
