Make these flavorful shallots and keep them in a covered container in your refrigerator. Pureed, they make a delicious spread for sandwiches such as sliced pork or sliced steak. You can also use the puree in salad dressings. Basically the shallots can be used in anything that calls for onions. They will provide a milder, mellower flavor, perfect for when you want onion flavor but don't want it to overpower the dish.

Roasted Shallots Preparation
Preheat the oven to 350 degrees F. Place the shallots in small bowl, cover with oil, add salt and pepper. Stir to coat shallots evenly with oil and seasoning. Spread shallots on a small baking pan. Bake for about 20 minutes, shaking the pan occasionally, until the shallots are soft in the center. Store in an airtight container in the refrigerator for up to 1 week.
