Make these flavorful shallots and keep them in a covered container in your refrigerator. Pureed, they make a delicious spread for sandwiches such as sliced pork or sliced steak. You can also use the puree in salad dressings. Basically the shallots can be used in anything that calls for onions. They will provide a milder, mellower flavor, perfect for when you want onion flavor but don't want it to overpower the dish."Like most roasted roots and vegetables, these are about as easy as it gets...and sooo delicious too! The only thing to be finicky about is the size of the shallots. They should all be of similar size -- or, if not, cut any large ones in half so they all cook at the same rate." - sgrishka
