I made this today and it was good but the roast was still dry and I'm not sure why. I had liquid covering it all the time except I noticed that the lid was part way off when I pulled it out of the oven. I noticed that the liquid was not covering the roast anymore but it was down about 1/4" from the top of the roast. Evidently the lid did not get put back on tightly when it was flipped after 2 1/2 hrs. Maybe that caused it to be dry. The gravy I made from the liquid was fantastic. I used my immersion blender and pureed everything but the potatoes and carrots. Then I thickened it with a bit of flour and water. I'll try this again and see if the lid was the problem. I also didn't use any wine as I don't cook with wine. Maybe that was part of the problem as well.
