Macaroni Tuna Salad

Now that the warm weather is here this salad is great as a side dish with burgers, or other BBQ meats.

Original recipe makes 4
2 cupsMacaroni
2 Eggs
1 5-oz canTuna; or salmon
1 cupMayonnaise
1/3 cupWhite vinegar
3 tablespoonsPrepared mustard; to taste
1 Onion
1 dashLouisiana hot sauce; to taste

Macaroni Tuna Salad Preparation

Cook the macaroni until semi soft (el dente)

Cook the eggs hard boiled.

While the macaroni and eggs are cooking blend the mayonnaise, mustard, vinegar, tuna and onions. When cooked place in ice cold water until cool, then drain and add to mayonnaise mixture. Chop the hard boiled eggs and add to mixture.

Mix thoroughly and add hot sauce to your taste.

Chill for about 1 hour.

Serve as side dish.

Mustard and vinegar made it too strong so I reduced the amount used. Otherwise good.

Too much vinegar. I will make again, but cut the vinegar amount in half and use a little more mayo and a little less mustard.

substutue the mustard with 1tbs creamy horseradish sauce and 1/4 c relish. very good my moms recipe. mustard is too strong

I used the three tbsps of mustard as called for and found this recipe way too strong. I suppose I might try it again with some adjustments.
