4 largeVeal steaks
4 slicesHam
4 slicesSwiss cheese
Flour
Salt; to taste
Pepper; to taste
3 Eggs
1/4 cupmilk
Dry bread crumbs
2 ouncesButter

Veal Cordon Bleu Preparation

Cut each veal steak in half. Pound out each piece of veal very thinly. You will need 2 pieces of veal the same size to make one serving of Veal Cordon Bleu

Place a piec of ham, then a slice of cheese on each of four slices of veal, ensure filling is within 1/2 inch of edge all around. Top with remaining veal slice and press the edges of the veal firmly together.

Coat veal lightly with flour seasoned with salt and pepper. Dip into combined beaten egges and milk, then into the breadcrumbs, pressing crumbs on firmly. Repeat egg and breadcrumb process.

Heat butter and oil in large frying pan. Add veal steak. Cook gently on both sids until golden brown. Allow approx. 6 minutes each side.
