Easy, and always a sure hit! Sweet potatoes are roasted in the oven until they develop a beautiful, rich, flavor-concentrated flesh. A quick whirl in the food processor with some spices produces a smooth, creamy, subtly sweet puree haunted by delicious citrus undertones. Not too sweet, not too savory. The flavor of the potatoes really comes through. While the spices give this dish a wonderfully festive holiday accent, it would be a welcome addition to any meal--steak, chicken, ham etc...
Heat oven to 400 degrees F. Place potatoes on baking pan. Bake until fork tender, about 50 minutes, set aside to cool.
When potatoes are cool enough to handle, cut potatoes in half. Using a spoon, scoop pulp into a food processor or large bowl. Add brown sugar, butter, orange juice, orange zest, cinnamon, allspice, and nutmeg, season with salt and pepper. Using the food processor or a handheld electric mixer, puree until smooth. Transfer sweet potatoes to serving bowl.
Yield: 4 to 6 servings.
You can also use the puree as a base for other recipes:
- thin it out with some vegetable stock, add some cream for an autumn soup.
- add an egg or two, maybe some grated cheese for a tart filling.
- yummy...sweet potato raviolis.
- wrapped in phyllo or puff pastry dough.
