Spinach Salad with Oranges and Feta Cheese

An incredible combination of flavors! Definitely a hit! If you don't have kalamata olives, or don't like them, then just leave them out - do not substitute regular black olives (the flavor will not go well).

Ingredients
| 1 largeNaval orange |
| 1/4 cupCitrus Vinaigrette; (approximately; see separate recipe) |
| 8 cupsSpinach leaves; torn |
| 2 Scallions; very thinly sliced |
| 1/3 cupFeta cheese; finely crumbled |
| 16 Kalamata olives |
Spinach Salad with Oranges and Feta Cheese Preparation
1. Peel the orange and separate the sections. Remove any course membranes, then cut each section in half and place in a small bowl. Toss with a teaspoon or so fo dressing, just enough to coat them lightly.
2. Place the spinach and scallions in a large salad bowl. Just before serving, toss with approximately cup dressing, just enough to coat the leaves.
3. Divide the spinach onto 4 salad plates. Sprinkle on the oranges, feta cheese, and olives. Serve immediately.
