Good with asparagus, green beans, spinach, and probably many other vegetables that taste good with a little citrus.

Original recipe makes 4
2 tablespoonsFresh lemon juice; (approx. juice of 1 lemon)
1/4 cupFresh lime juice; (approx. juice of 3 limes)
3 tablespoonsFrozen orange juice concentrate
1 1/2 teaspoonsRed wine vinegar
1 cloveGarlic; minced or pressed
1/4 teaspoonSugar
1/2 teaspoonSalt
Black pepper; to taste
1/2 cupolive oil

Citrus Vinaigrette Preparation

Place all ingredients in a jar with a tight-fitting lid and shake vigorously. Let stand 30 minutes before using to blend the flavors.

Worked wonderfully on a spinach and bleu cheese salad. Light, fresh and yummy. I decided to use fresh orange juice for mine. Thanks for this simple and quick vinaigrette.
